Creating together and recipes
We actually had a beautiful sunny day here in the North of England today. I could actually hang out my washing. We're forecast more rain tomorrow, so we thought we should make the most of the sunshine.
Luke and I spent some time in the garden, planting new seeds. Today's were lettuce, rocket and fennel.

He always enjoys being outdoors and getting his hands dirty. He particularly loves climbing the tree in our garden, but it's full of ants at the moment so he gave that a miss today.
I really love to sit in the garden and meditate. It's such a lovely way to focus your mind and have some space to yourself, listening to the sounds of nature. I managed 10 minutes today, and it felt really lovely to have that time and have the sun shining on me.
We then made raw pasta and salad for lunch. Luke loves to create new recipes, like I do, so we enjoy spending time in the kitchen together. We used carrots and courgette to make the raw pasta using a peeler, then added some salad, pine nuts, himalayan salt and olive oil.
We sat in the garden to eat lunch and dinner today.
For dinner I attempted to make a raw cream cheese, which tasted really lovely. Both boys enjoyed it too.
I used fresh chives from the garden, which gave it a really nice flavour. This is the recipe:
200g Cashew Nuts - soaked for about 6 hours
1 Lemon - juiced
1 Onion
Pinch of Himalayan Salt
Handful of Chives
Blend everything, apart from the chives, and keep adding water until you get a creamy consistency. Then add the chives and enjoy. I'm going to experiment with this recipe and try different ingredients so i'll share any that turn out successfully.
Well it's been a busy day, and more rain forecast for tomorrow, so the wellies may be coming out again!
