My Raw Vegan Day

Breakfasts
* Juice/smoothie - this is how I start every day.
* Raw muesli - made with a variety of nuts, seeds, dried fruits, sprouted seeds, fresh fruit and maca, with raw almond or cashew nut milk.
* Fruit salad - different varieties, sometimes with raw almond milk.
* Chia Seed Pudding - try adding in dried fruit, cacao nibs, pomegranate seeds and maple syrup.




Lunches
* Salads - plenty of variety with added nuts, seeds and sundried tomatoes, and a homemade dressing.
* Raw soup - again lots of different recipes.  I'll add a little warm water in winter, if I want something warm.
* Raw hummous - with veggie sticks or raw crackers.

Dinners
* Raw pasta - made with courgette and carrot, with a raw sauce.
* Salad wraps - using large leafed lettuce or nori as a wrap.
* Raw burgers - made with nuts, vegetables and herbs.
* Marinated vegetables - a variety including mushrooms, courgette, onion, broccoli and peppers.

Snacks
* Fruit - fresh and dried
* Nuts and seeds
* Homemade raw chocolate
* Medjool dates - stuffed with cacao nibs
* Veggie sticks with raw dip
* Raw chocolate brownies
* Raw fruit crumble


Recipes

Raw Chocolate Cake



Cake
1 Cup of Cashew Nuts
1 Cup of Cacao Nibs
4 Tbsp Maple Syrup
80ml Water

Blend the nuts to a powder, then place in a bowl.  Do the same with the cacao nibs and add to the nuts.  Add the other ingredients and mix together, preferably with your hands. Add more water if necessary.
Place in a bowl press down and place the fridge to set.

Icing
2 Avocados
1/2 Cup of Cacao Powder
2 Tbsp Maple Syrup
1/2 Cup of Water
1 Tsp of Vanilla Extract

Blend until smooth.  Spread on top of the cake and place back into the fridge to set.

Raw Chocolate Chip Brownies


1 Cup of Cashews
1 Cup of Dates (soaked for a few hours)
5 tbsp Cacao Powder
2 tbsp Maple Syrup
1/2 tsp Vanilla Extract
Handful of Cacao Nibs

Blend the nuts until they turn powdery, then add the dates and blend until they are fully mixed together.  Next add the cacao powder, maple syrup and vanilla and blend for about a minute.

Mix in the cacao nibs and place in a square dish, press down and place in the fridge for a few hours.  Cut into small squares, and enjoy!



Green Smoothie
4 Apples
Handful of Kale
Small Piece of Ginger (about an inch)
1 Piece of Broccoli
Half a Small Pineapple
1 Banana
Tsp Spirulina
Tsp Maca
Tsp Wheatgrass

Juice the apples, kale, ginger, broccoli and pineapple.  Add to blender with the other ingredients and blend until smooth.
